Black Bean Burgers


Ingredients:
1 (15.5oz) can Black Beans- drained
1/8 c Onion- finely chopped
1 tsp Garlic- minced
½ c Whole Wheat Bread Crumbs
½ c Whole Kernel Corn- drained (optional)
Salt (to taste)
Black Pepper (to taste)
Red Pepper (to taste)
2 Whole Wheat Buns
2 Tbsp Dressing*
Lettuce
Tomato

*Dressing
1 tbsp Low-Fat Sour Cream
1 tbsp. Low-Fat Ranch Dressing
2 tsp Taco Seasoning
Mix all ingredients and set aside.

Directions:
Sautee onions and garlic in skillet with cooking spray. Smash black beans and season with salt, black pepper, and red pepper. Stir in sautéed mix. Add corn. Fold in bread crumbs as needed to make mixture manageable. Make into patties. To cook: Spray skillet with cooking spray. Cook patties until browned on both sides. Dress bun with lettuce, tomato, patties, and dressing.
