Ingredients:
2 cups Frozen Shelled Edamame
1 1/2 cup Fresh Corn Kernels
1 1/2 cup Mango Cubes (1 med)
1 cup Chopped Tomato (1 lg)
1/2 cup Red Onion- chopped
2 tbsp Fresh Cilantro- chopped
1 tbsp Extra Virgin Olive Oil
1 tbsp Lime Juice
3/4 tsp Salt
1/4 tsp Ground Black Pepper
Directions:
Prepare edamame per package directions. Drain and rinse under cold water. Trandfer to large bowl. Stir in corn, mango, tomato, onion, cilantro, oil, lime juice, salt and pepper. Toss well.
